Mission Tortillas Menu Challenge

This is a Sponsored Post written by me on behalf of Mission Foods. All opinions are 100% mine.

Being in San Diego, I have access to freshly made tortillas at local stores. However if I can’t get that, my first choice is Mission Tortillas. They have a similar fresh taste. When I buy flour tortillas they are nice and soft, rather than hard and stale like other brands. The flour tortillas are perfect for burritos, tacos, quesadillas and more.

Mission Tortillas Recipe

With Mission Tortillas my favorite thing to make is quesadillas. My recipe is usually pretty simple, Tortillas and cheese. However at MissionMenus.com there is a great recipe. For the recipe you will need:

5 Mission Medium/Soft Taco Flour Tortillas, warm
2/3 cup Spinach and Artichoke Dip, prepared
1 2/3 cups Rotisserie Chicken, breast only, and diced
2 1/2 cups Mozzarella Cheese, shredded

Combine spinach-artichoke mixture with diced chicken. Heat in microwave until hot, reserve.

Preheat a medium non-stick skillet over medium heat. Spray pre-heated pan with pan spray.

Sprinkle 1/2 cup of mozzarella cheese on one half of a tortilla, on the other side spread a 1/2 cup of the chicken-artichoke mixture and fold in half. Repeat for the remaining 4 tortillas.

Place folded tortilla into the pre-heated pan and toast on each side for 2-3 minutes until the quesadilla is nicely browned. Repeat for remaining 4 quesadillas.

Remove from heat, cut into half, serve hot.
